There was some discussions here before on op-amps.  I ran into this document that talks about the differences between different types of op-amps and has lots of charts.  It looked very useful to me.  I was hoping to use it to help figure out when I can substitute my LM741 for whatever else is in the schematic.

That's a good paper.  There are some other good analog design
resources on the web, especially the application notes at
National Semiconductor and at Linear Technology:

Regarding your LM741, take care what circuit you plug it into; it
won't be too long before 741s will be valuable museum pieces!  :)
