Anchorchip, USB simmstick, already mentioned cypress. Check out John Hyde's

The Cypress $99 starter kit is pretty good. Although I have found their lack of PC side source code
to be a real pain.
The Cypress M8 core is nowhere near as flexible as the PIC though, IMHO... coding for the devices is
a bit of a challenge :)

I am looking forward to seeing the USB enabled PICs that are due out towards the end of this year.
Hope Microchip make a real effort on providing some decent source code for BOTH ends of the
system...

The USBSIMM is a great way to experiment with USB. The board has a
USB-enabled 8051 (sorry PIClist) with 8k internal RAM and 32k external RAM.
The firmware can be downloaded from the PC to run from RAM. A free (limited)
compiler is available from KEIL http://www.keil.com. The USBSIMM is SimmStick
compatible, see other products at http://www.dontronics.com.

The SimmSticks are also a great resource for PIC development. :-)
