anyone know of PIC programmer/compiler/simulator software for Linux ?
Or maybe even some piece of software which will let me program using my
Picstart+ under Linux?

As Mike says, check out
http://www.gnupic.org/

Or go directly here
http://www.dattalo.com/gnupic/gpasm.html
http://www.dattalo.com/gnupic/gpsim.html

to get the assembler and simulator.

Andrew Pines has written a Linux driver for Picstart+:

http://www.cosmodog.com/pic/index.html

I use these tools regularly and haven't used MPLAB for perhaps a year or so.

Compilers: Jal (mine) and c2c/p2c (P.Baranov) are available for Linux.
