I have a Maxim data CD and I just had a very quick
look. I'm not sure what resolution or how many
channels you wanted, but here are some anyway:
8 bit res:
Max 1112 - 8 channels
Max 1113 - 4 channels
10 bit res:
Max 192 - 8 channels
12 bit res:
Max 188 - 8 channels

It's always worth looking at the Philips I2C Peripherals Handbook first.
They offer:
PCF 8591 4-ch 8-bit A/D + D/A O/P
Other handy things:
PCF 8583 Clock-Calendar with 256 bytes of Static RAM (with battery
backup).
(this chip can be programmed to give a wake-up interrupt
pulse).
Universal LCD driver (digits)
LCD row and coloumn drivers (matrix)
4-digit LED driver
8-bit I/O expander
etc etc.
And of course all these can be strung together on the I2C bus, just
using 2 pins.

Really a fine chip..
4 single ended or differential analog-to-digital converter with
track-and-hold feature and one digital-to-analog converter
plus some other features....all in one!
...anyway it's not so cheap...

I thought most of those used a 4-wire serial bus rather than I2C. So far
the only way I've found to get >8 bit ADC on I2C is to program a PIC14000
as an I2C slave device. Works a treat! (wouldn't manage to do conversions
very fast though)

There are few ADCs with I2C interace, but National makes a 12-bit. Look for
LM12438:
12-Bit Plus Sign Data Acquisition System with Serial I/O and Self-Calibration
at http://www.national.com/catalog/Analog_A.html .
It's very capable but not cheap, USD 35 1-25.
